Indonesia produces black and white pepper. White pepper is traditionally produced in Bangka Belitung and known as Muntok white pepper.
White pepper (Piper nigrum) is a flowering vine in the family Piperaceae. Black and White Peppercorns are both the fruit of the Pepper plant, but they are Processed differently. The berries used for White Pepper are ripened on the vine and soaked so that their outer hulls are easily removed . White pepper is produced by removing outer skin of the Berries. Vietnam and Indonesia are the Largest White Pepper Producing countries that converts about 50% of its Pepper to White.

Currently, Vietnam is the World’s Largest Producer and Exporter of Pepper. Black Pepper is mainly cultivated in India, Indonesia, Brazil and Vietnam.

Indonesia produces large quantity of Long Pepper in various states. Long pepper is a dried flowering vine and used in spice in many cuisines. Today, long pepper is a very rare ingredient in European cuisines, but it can still be found in Pakistani vegetable pickles, some North African spice mixtures, and in Indonesian and Malaysian cooking.
It is readily available at Indian grocery stores, where it is usually labeled pippali. Pippali is the main spice of Nihari, one of the national dishes of Pakistan and Indian metropolis of Lucknow. Long pepper is an important and common ingredient in many medicines of Ayurveda.

Turmeric is the dried root of the plant Curcuma longa. Turmeric has been used in Asia for thousands of years and is a major part of Ayurvedic medicine. It was first used as a dye, and then later for its medicinal properties.

Damar Batu is petrified natural resin of ancient shorean trees. It is much harder than other resins. It has brown and black colors with various sizes (from 1 cm to 20 cm). It has been preserved and can be found in the ground /earths surface in the jungles of Indonesia.
Damar Batu is stone-shaped hard resin, obtained from a particular variety of the Dipterocarp species. The resin of Damar Batu is obtained under ground in fossilized form, near to the tree roots. It is found mainly in South Sumatra and Kalimantan. The quality of Damar Batu is determined mainly by the size of the resin lump, their color and the amount of damar dust.

Mace is the spice made from the reddish seed covering (aril) of the nutmeg seed. Its flavour is similar to nutmeg but more delicate; it is used to flavour baked goods, meat, fish, vegetables and in preserving and pickling.
In the processing of mace, the crimson-colored aril is removed from the nutmeg seed that it envelops and is flattened out and dried for 10 to 14 days. Its color changes to pale yellow, orange, or tan. Whole dry mace consists of flat pieces—smooth, horn-like, and brittle—about 40 mm (1.6 in) long.

Nutmeg is the seed or ground spice of several species of the genus Myristica. Fragrant nutmeg or true nutmeg is a dark-leaved evergreen tree cultivated for two spices derived from its fruit: nutmeg, from its seed, and mace, from the seed covering. It is also a commercial source of essential oil and nutmeg butter.
If consumed in amounts exceeding its typical use as a spice, nutmeg powder may produce allergic reactions, cause contact dermatitis, or have psychoactive effects. Although used in traditional medicine for treating various disorders, nutmeg has no scientifically confirmed medicinal value.

It is used to manufacture laundry soap for cloth washing, calcium soap for animal feed and distillated fatty acid. It is also used to manufacture biodiesel.

Gambier or gambir is an extract derived from the leaves of Uncaria gambir, a climbing shrub native to tropical Southeast Asia. Gambier is produced in Indonesia and Malaysia. It can be used as a tanning agent, a brown dye, a food additive and as herbal medicine.
